Il Sapito vineyards are all located in the surroundings of Montaione, next to San Vivaldo Franciscan Monastery. Vine varieties are red and white fruit . Among the red ones there are Sangiovese , Canaiolo, Colorino and Black Malvasia; the white ones are Trebbiano, Chardonnay and a small amount of Traminer.
Il Sapito vineyards are registered at the association Chianti DOCG and IGT Toscana. Ground: sandy, rich in tuff.

All the wines produced by this Podere come from organic-grown vineyards. The range is made of only two wines: Il Brigante (red) and L' Eremita (white). Those wine's names recall historical characters who lived in the woods surrounding those vineyards, that is to say the Crippled gang and San Vivaldo, a hermit coming from San Gimignano.
Both red and white fruit wines have special flavours because of the elevation, of the peculiar ground and the special environment conditions
