Our farm breeding is a closed circuit and at the moment there are about 1000 animals (mainly Cinta Senese, but also wild boar and Italian pig). Their feeding is made of a flour blend grinded in the mill located inside our farm.
They also find a part of their daily ration in the woods, mainly acorns and chestnuts
Our cured porke meat Factory is a very modern building and has a selection room. The meat coming from Cinta Senese, Italian pig and wild boar is processed here.
A part of the production includes fresh meat cuts directed to local butchers and the other part is processed to make traditional Tuscan salami, according to the traditional family recipes rich in local spices.
Salami are aged into cells and stored until they are sold, or cut into pieces and vacuum-packed. The building has also a white room for cutting and packaging in ATP (inert atmosphere)
