Cheek's Characteristics

Seasoning

Technical Processing

Cinta senese's cheek is produced exclusively by pure bred "Cinta Senese" pigs whose meat is certified as DOP. The product is squared and massaged with pepper and garlic, then covered and left to rest in salt for 10 days. It follows the cool tumble to 15-20 days and maturing for about 16 weeks.
